Happy Meatless Monday. It’s starting to feel a little like fall in the mornings/evenings and heats right up in afternoons to the 80’s! These poor GA trees don’t know when to change colors.

Today, I’m sharing my easy tuna-less salad! I discovered a recipe a few years ago and make it once a week using ingredients that I typically always keep in the refrigerator. These pictures may not look the most appetizing (I never thought any type of meat salad looked delicious anyway) but it’s SO GOOD!

Here’s what you need:

  • 1 can of chickpeas
  • vegan mayo (I use about 2 spoons), you can use regular mayo if you’re not vegan!
  • relish (I use 1 spoonful)
  • mustard (I use 1-2 spoonfuls of spicy mustard)
  • salt + pepper (if desired)

Ingredients you probably already have!
  1. Crush the chickpeas in a blender, by hand with a “smasher” (similar to what you’d use to mash potatoes), or whatever food processor you have.
  2. Scoop chickpeas into a big bowl.
  3. Add mayo, mustard, relish, a pinch of salt and pepper.
  4. Mix it all up!

Done! Now you can make tuna-less sandwiches, add it to a salad, or top it on some crackers for a snack.

I’ve been a vegetarian for 16 years but I won’t try to convince you to cut meat out completely unless that’s what you want to do. However, I would love to challenge everyone to go meatless every Monday (check out a Meatless Monday initiative here that I discovered before becoming vegetarian) or try going meatless for one meal a week!
